Roasted Cauliflower and Chickpea Tacos/Wraps

Cauliflower & Chickpea Mix

  • Chickpeas, 1 can drained
  • Cauliflower, 1 head washed and cut into bite-size pieces
  • Wraps or multiple soft shell tacos, 4
  • Red cabbage , 1 cup
  • Pickled jalapenos, to serve
  • Avocado (or guac), 1
  • Coriander, to serve

Seasoning Mix

  • Chili powder, 2 tsp
  • Ground cumin, 1 tsp
  • Garlic powder, ¼ tsp
  • Onion powder, ¼ tsp
  • Salt, 1 tsp
  • Lime juice, 1 tbsp
  • Olive oil, 1 tsp
  • Water, 1 tbsp

Lime crema topping

Preheat oven or air fryer to 200° C. In a medium bowl, whisk together chili powder, garlic powder, onion powder, cumin, salt, lime juice, olive oil, and water.

Mix the seasoning paste mix into a bigger bowl with the chickpeas and cauliflower florets. Place chickpeas and cauliflower on a baking sheet or in the air fryer. Roast for 30-35 minutes (less in the air fryer), stirring occasionally during cooking until chickpeas are slightly crispy and cauliflower is tender. Remove from oven and set aside.

To make the lime crema, place the Greek yogurt or sour cream in a small bowl. Add fresh lime juice and cilantro. Stir well. Season with salt and pepper, to taste.
