Caramelized Banana Oatmeal

  • Oats, 40 g
  • Egg whites, 2
  • Banana (80 g used for calorie tracking), 1
  • Butter, ½ tsp
  • Honey, 1 tsp
  • Cinnamon,

Cut the banana down the middle.

Get a small-medium size pot on the stove. Add the butter and allow to melt and caramelize a bit. Add the banana flat side down and allow it to brown. Top with cinnamon. Once the banana has browned, flip it over and drizzle with the honey. Cook the banana until it's softened, brown and caramelized. Remove and set aside.

Boil your oats in the same pot, according to package instructions. I use 40g oats with 1 1/4 cup water on the stove.

The egg whites are not necessary but will add protein to this meal. Once your oats have finished cooking, remove from heat and briskly stir through the egg whites so that they don't turn into eggy pieces in your oats. I return this to the heat once mixed through just to ensure the egg whites are cooked through. 71° is the temperature needed to kill salmonella, so you don't need to bring the oats back to boiling point.
